Artichoke [Cynara cardunculus L. var. scolymus (L.) Fiori] is a perennial herbaceous plant of the genus Artichoke in the family Asteraceae, grown mainly in the Mediterranean region, first in the Roman area. The edible part is the inner bracts and receptacle, and the inedible industrial by-product part includes its outer bracts and stems and leaves, accounting for about 80% of the fresh weight of the whole plant.
