Kampo Tea, a natural probiotic beverage made from a base of tea (black, green, pu-erh or oolong), sugar, water, bacteria and yeast through fermentation. Symbiotic culture of bacteria and yeast (SCOBY), which is fermented through a symbiotic relationship between acetic acid bacteria and yeast, is steeped in tea water with added sugar (glycolysis) and fermented for one to two weeks. This beverage is rich in probiotics, digestive enzymes, organic acids, vitamin B, antioxidants and trace minerals, and is popular for a range of potential health benefits.

The main strains of black tea bacteria include yeast, acetic acid bacteria, and lactic acid bacteria. The yeast component usually includes Saccharomyces cerevisiae (brewer's yeast), Brettanomyces bruxellensis (Brussels brettanomyces), Candida stellata (star-shaped pseudofilament yeast), Schizosaccharomyces pombe (corn wine fission yeast) , and Bayer's Splice Yeast (Zygosaccharomyces bailii), which are responsible for fermenting the sugars added to the tea base to produce alcohol and provide some of the special flavors. 

The bacterial component usually contains Gluconacetobacter xylinus, which is responsible for breaking down the alcohol to produce acetic acid. As a result, the alcohol concentration in our instant kombucha powder is not too high, while the flavor is sweet and sour.
